Einkorn is the oldest wheat known. It’s rich in vitamins and minerals and contains less gluten than many modern wheat varieties. The flavor is slighlty nutty and toasty and in general deeper than regular wheat. In this bread we use 50% einkorn and 50% wheat flour. All ingerdients are organic.
